Southern Social’s Beet Salad (Copycat)

B and I took a weekend getaway to one of our favorite places…Vero Beach! It was a wonderful weekend. Lots of good food, books, and beach time! I’ll keep the details to a minimum and get to the reason we’re all here…the food! Flowers are life.

I’m not exactly sure how my flower-love started. Maybe it was because when I was a kid, all my grandmas and my mom grew beautiful flowers. I think it was my mom’s garden that really captured my imagination, though. She has always planted the kind of garden kids love because it’s colorful and wild and jungle-like. She loves whimsical accents like a tipped over pot with the flowers planted like they’re all spilling out. Just a few years ago, I spied a gorgeous teal and rusty wheelbarrow in a dumpster and rushed straight over to get my dad’s truck to pick it up and give it to my mom for her garden. She planted it with sweet potato vine and succulents and Egyptian Papyrus grass. Dreamy. My mom’s landscaping method drives my dad crazy. There’s no plan, there’s no design, there’s no evenly spaced anything, and there’s certainly no constraint with color. Just writing that makes me laugh because a garden like that is just pure JOY. Part of the magic of my mom’s garden had to be that I never had to do anything to make all that beauty happen. I can only imagine how much work it was for her now that I have my own gardening experience.

Loving That Balcony Life

As nature people living in an apartment, a balcony/patio is a must. And we learned the hard way if that balcony/patio is in Florida and isn’t screened in, it’s essentially useless most of the time! (Because mosquitoes, bees, wasps, flies, lizards, snakes…you get the idea.) The people who built this complex did a very smart thing…they arranged the buildings in such a way that every apartment has a beautiful view. There are 3 ponds, green spaces, and a lovely tree-lined walkway on the property. Both places we’ve lived in this complex have had gorgeous views, but the one we’re in currently is perfect! We’re in the back of the property and the wildlife here is the best. We regularly see alligators, Great Blue Herons, Little Blue Herons, Whistling Ducks, Ospreys, Sandhill Cranes (with babies 😍), Great White Egrets, Cattle Egrets, plus various kinds of snakes, turtles, butterflies, songbirds, and bugs.

An Eggs-tremely Easy Summer Meal

A few weeks ago on the way home from church, Brian asked me the dreaded question: “what’s for lunch?” Normally the thought of cooking when I’m hungry and hot (our air conditioner in the car is broken right now) makes me agree to picking up tacos…but I’ve been trying to 1. Eat healthier 2. Stick to the budget 3. Not break rules 1 and 2 just because I’m hungry and hot. So I had to think fast. What could I cook in a hurry that would be satisfying and delicious? I started remembering the things I had: farm fresh eggs…homemade bread…tomatoes… and it hit me…I said “I’m going to make you the BEST fried egg sandwich you’ve ever had!”

Learning to Love Ferns

My experience with ferns up until this past year is dismal. Tragic. Best not to be recounted. Ferns are not like other houseplants; they do not bounce back from underwatering, and I get the feeling they don’t appreciate being in my house at all. Well, fine. Live on the balcony for all I care.

I have found a few ferns that I do better with, which I will talk about in more detail below…the ferns with tiny leaves tend to be harder to keep happy, so buyer beware! (I’m looking at you, Maidenhair Fern! Oh yeah, you’re dead.)

A Cake Walk Down Memory Lane

One of my favorite things growing up was Thanksgiving Day…not just because of the incredible food and family time, but because my birthday is in November and we always celebrated it on Thanksgiving. Now normally that meant birthday pumpkin pie, which I was (and still am) ALL about…but one year I thought I’d mix it up and asked my mom for a 3-tier funfetti cake. Somehow she pulled it off and totally wowed me…all those rainbow colored white chocolate chips 😍 I didn’t even know we had 3 different sized pans! That year in particular, the news had been warning us about the possibility that we would feel significant aftershocks from an earthquake on December 3. It was kind of a big deal, since in southern Ohio we didn’t often have to deal with earthquakes. One of the times I went to the counter to admire my cake, I was shocked to see it leaning severely to the right, having gotten too warm from the heat of the oven. My Mom said, “the earthquake came early.” I should have taken that as an early warning that in baking, as in life, things don’t always go according to plan!

My Love Letter to Lemons

I don’t know where the obsession started…I remember I started drinking Diet Coke with a wedge of lime on vacation in Florida when I was 16. It must have been at some point after that when I switched to lemon since many restaurants don’t have lime available. THEN when I started paying for myself at restaurants, I quickly realized they charge a fortune for pop (soda…{eyeroll}…whatever.) so I started ordering water with lemon. That turned into β€œcan I please have A LOT of lemon?” which turned into Brian adding after I order β€œshe means like a WHOLE lemon.” Once a server asked me if I was planning to make lemonade. I just stared at him, confused. He said, β€œyou know, some people order a bunch of lemons, use the sugar packets on the table and make their own lemonade for free.” 

Me: β€œUgh, no. I would never ruin my lemon water like that.”
